Harvest Update

HARVEST IS NOW HALFWAY THROUGH
AND WE HAVE ALREADY STARTED SHIPPING!

We have tasted hundreds of coffees and have selected the very best. We are working mostly with our existing producers but have also added some new coffees to the menu. We are happy to introduce a few lots from Atitlán and Sierra de Las Minas this year and introduce a few new producers from new areas of Huehuetenango

Many producers have finished their first picking and are getting for their second, just waiting for the coffee cherries to fully matured.  Most of our producers practice selective picking and selective pruning after the harvest, this means they select which cherries, or trees will be picked or pruned. Yet again many producers have struggled to find pickers this harvest, which of course is an ardeous yet key task in the process.  

We work with producers who practice washing and double soaking after the fermentation, in addition to offering some very tropical and fruity  Natural, Honey and alternative processing methods. If you are interested in these special processes, please get in touch with us now, as these are in limited supply.

We have installed a pre-sorter of parchment in our Huehuetenango warehouse where we make sure all the lots we receive are free of foreign debris such as stones, patio chips, leaves, branches, etc. 
We have purchased a Water activity reader and we take a reading of all of our offers and purchased coffees at our lab in Guatemala City. We hope that this will indicate to us which coffees are more likely to last longer.  We are collecting data every day and hope to inform you more of our findings later when we have enough information. 

We have already shipped coffee to Australia, Europe and the first lots for North America this week. This we think will improve the longevity of the coffees and will give you roasters a chance to roast some fresh Guatemalan coffees early in the year! We are very excited about this.
